What makes this place so special? Panic is a bakery where they make and sell real bread, and that’s hard to find in Madrid these days.
Once you cross the door, you come into a parallel universe, it’s a journey through your senses… The scent of freshly baked bread fills the air of this small and cozy place, and in the air, warm and wet, you can breathe the mist of old bakeries. You feel like touching those loafs, so imperfectly perfect, and the huge wooden table, and losing track of time while exploring the books all around the place, or chatting with Javier, founder and passionate professional like no other.
If we had to define Panic in words, it would be patience, time, honesty, slowness. They start working very early, around 7 a.m. to make fresh bread for the day, and they open from 10 am to 9 pm, every day except Sundays. The ingredient list is really short: plenty of time, sourdough and organic flour, water, salt… and lots of love, and the result is simply spectacular. Currently they offer six types of bread, all worth tasting: basic bread (white flour or whole wheat), 100% spelt, with seeds, 80% rye (a true delight) and the “sticks”; all of them very tasty. The price goes from 3.60€ to 5.50€ per kilo of bread, an unbeatable price for a quality hard to find in Madrid. Besides bread, here you can also find spectacular cakes made by HomeCake, and occasionally they organize workshops where you can learn how to make a bread like these at home (4 hours, 50 €).
